Chef Vishal: Quinoa Salad

Recover like a pro with this plant-based, vegan quinoa salad.

Ingredients

  • 1 cup quinoa
  • 1 can black beans (drained, and rinsed)
  • 1 can organic sweet corn (drained, and rinsed)
  • 1 red bell pepper
  • 1 orange bell pepper
  • ½ red onion (medium sized)
  • ½ tbsp. cumin
  • ½ tsp. paprika
  • ½ tsp. cayenne pepper

Dressing

  • ¼ cup extra virgin olive oil
  • Lime, halved and juiced
  • ½ tbsp. cumin
  • ½ tsp. paprika
  • ½ tsp. cayenne pepper
  • Salt and pepper to taste

Directions

  1. In a medium-sized pot, add quinoa and 2 cups of water. Bring to boil, then reduce heat to a simmer and cover.
  2. Add cumin, paprika, and cayenne pepper to pot and stir into the quinoa.
  3. Cook until liquid is absorbed, about 15 minutes.
  4. Wash and dry produce.
  5. Dice bell peppers into small bite-sized pieces.
  6. Dice red onion into slighter larger bit sized pieces.
  7. In a large bowl, combine the black beans, corn, bell peppers, onion, and quinoa.
  8. In a small bowl, combine dressing ingredients and whisk thoroughly.

Dress the salad to taste, then serve and enjoy!
